On Thursday. That is D-day at our house - Destruction day. That is the day that my kitchen will cease to be mine for about 2 weeks. And I don't know where we are going yet! Could be a visit to the Grands or a stay in another temporary apartment. Who knows?! This must be another lesson on "rolling with it," whatever IT is.
On that note, I do have a menu for the week. I just don't know how much of it I will actually be preparing.
Monday - Bacon and Cheese chicken, rice, salad
Tuesday - Skillet barbecue pork chops, Parmesan potato wedges, and peas
Wednesday - leftovers (probably Brown sugar chicken, pasta and peas again)
Thursday - Spaghetti and meatballs
Friday - French dip sandwiches and fries
Saturday - undetermined (was planning a cookout with friends, but can't since the kitchen will be a shambles)
Sunday - Marinated pork chops on the grill, pasta or rice, creamed corn

Skillet-Barbecued Pork Chops
Vegetable cooking spray
2 (4 oz) lean center-cut loin pork chops (3/4 inch thick)
2 Tbsp minced onion
2 tsp minced garlic
1/2 cup water
1/4 cup no-salt-added tomato paste
2 Tbsp brown sugar
1.5 Tbsp ;ow-sodium soy sauce
2 tsp lemon juice
Dash of salt
Coat a small non-stick skillet with cooking spray; place over medium-high heat until hot. Add chops and cook 2 minutes per side or until browned. Remove chops from skillet. Drain and pat dry with paper towels. Wipe drippings from skillet with a paper towel.
Coat skillet with cooking spray; place over medium high heat until hot. Add onion and garlic; saute one minute. Add water and remaining ingredients to skillet; stir well. Return chops to skillet; bring to a boil. Reduce heat and simmer, uncovered, 20 minutes or until tender.
Parmesan Potato Wedges (I'll be doubling this one)
1 medium baking potato
Butter flavored cooking spray
2 tsp reduced calorie margarine, melted
1/4 tsp fried oregano
1/8 tsp garlic powder
1/8 tsp salt
1/8 tsp paprika
2 teaspoons grated Parmesan cheese
Scrub potato; cut into 6 wedges. Soak potato wedges in ice water for 30 minutes; drain and pat dry with paper towels.
Coat an 8-inch square pan with cooking spray. Arrange potato wedges in one layer in the pan; brush with margarine. Combine oregano and next 3 ingredients; sprinkle over potatoes. Bake at 350 F for 30 minutes, turning twice. Remove from oven; sprinkle with cheese and serve immediately.

Sounds like another yummy week. Two weeks seems like a super long time. I hope they do the work right and everything is good when they're done.
