For those of you who are Southerners of a certain age, Hee Haw might have been a Saturday night tradition in your house like it was in mine. I remember the show well, and some of my favorite sketches were the ones featuring Minnie Pearl. There was one sketch that always started with someone shouting "Hey Maw, what's for supper?" Too funny.

Lasagna
1 lb bulk sausage
1 lb ground beef
1 clove garlic
1 Tbsp basil
1 1/2 tsp salt
1 lb can of tomatoes
2 6 oz cans tomato paste
10 oz box of lasagna noodles
3 c Ricotta cheese
1/2 c Parmesan cheese, grated
2 Tbsp parsley
1 tsp salt
1/2 tsp pepper
1 tsp oregano
2 eggs
8 oz mozzarella cheese, cubed
1 lb mozzarella cheese slices
Brown meat and drain excess fat.
Add next 5 ingredients (I use jarred sauce) and simmer, uncovered, for 30 minutes.
Cook noodles as directed (I use no boil noodles).
Beat eggs and add remaining ingredients, except for cheese slices.
Layer 1/2 noodles in 9x13 pan. Top with 1/2 cheese mixture, 1/2 meat mixture. and 1/2 cheese slices. Repeat.
Bake 375 for 30 minutes.
Turkey Surprise Packages (from Kid's First Cookbook by Nancy McDougall)
2 scallions
2 oz fennel
1 carrot
1 celery stalk, small
4 turkey breast steaks (5-6 oz each)
2 Tbsp chopped parsley
8 fatty bacon strips
1 lemon, grated rind and juice
salt
ground pepper
lemon or lime wedges to serve
*Cut scallions, fennel, carrot, and celery into thin strips of about the same thickness.
*Lay the turkey breast steaks flat on a cutting board and pat chopped parsley on each.
*Wrap 2 strips of bacon around each turkey breast in a cross shape.
*Cut 4 12-inch circles from the parchment paper, brush lightly with oil, and put turkey breast just slightly off-center.
* Arrange vegetable strips on top of the turkey breasts, sprinkle with lemon rind and juice, and season well.
*Fold each paper circle over the meat and vegetable, and, starting at one side, twist and fold the paper edges together.
*Work your way around the semicircles of parchment paper, sealing the edges of the packages together neatly.
*Put the packages in a roasting pan and cook for 35-45 minutes, or until the meat is cooked and tender when tested with the tip of a knife. Carefully remove from the oven and lift out the packages with a spatula.
*Serve the packages with the lemon wedges on the side to squeeze over them.

Chicken Strips in Bacon Blankets
1/4 cup Dijon mustard
1/4 cup maple syrup
1/4 tsp chili powder
4 chicken tenders
8 bacon strips
* Preheat broiler. Stir together mustard, maple syrup and chili powder. Reserve 1/2 of the mustard mixture for later.
* Using kitchen scissors. cur each chicken tender in half lengthwise to make 2 thin strips. Place the strips on a large plate. Brush each chicken strip with remaining mustard mixture. Wrap one bacon strip around each chicken tender.
* Place chicken tenders, bacon ends down, on the rack of a broiler pan. Broil 5 inches from heat for 4-5 minutes. Turn and broil for 4-5 minutes more or until bacon is crisp and chicken is no longer pink inside. Serve with reserved mustard mixture as a dip.
Golden Chicken Nuggets
1 envelope Lipton Recipe Secrets Golden Onion soup mix
1/2 cup plain dry bread crumbs
1 1/2 lbs boneless, skinless chicken breasts, cut into 2 inch pieces
2 Tbsp margarine or butter, melted
* Preheat oven to 425 F. In a small bowl, combine soup mix and bread crumbs. Dip chicken in bread crumb mixture until evenly coated.
* Arrange chicken on a lightly greased cookie sheet. Drizzle with margarine or butter.
* Bake uncovered 15 minutes or until chicken is no longer pink inside, turning once.

Sounds yummy. Isn't it funny, when I have my act together and I've been to the grocery store, I don't mind the what's for dinner question, but if things are hectic or crazy and I don't have a plan, it drives me crazy!
